Turkey & Veggie Lasagna Roll-Ups: Because Layers Are Overrated (And So Is Washing Dishes)

Hey there, kitchen adventurer! Tired of wrestling with floppy lasagna sheets that slide apart like a Jenga tower? Meet your new best friend: lasagna roll-ups. They’re like regular lasagna’s cooler cousin who shows up to the party with portion control and zero structural drama. Plus, you can smuggle veggies into them, and nobody will notice. (We won’t tell if you don’t.)


Ingredients (Serves 4-6 Humans or 1 Very Ambitious Carb-Lover):


Instructions:

  1. Boil noodles like a pro. Cook lasagna sheets al dente (aka “firm but not crunchy”). Drain, then lay them flat on a towel. Pretend they’re yoga mats.
  2. Cook the turkey squad. Brown the turkey in a skillet. Toss in zucchini, carrot, garlic powder, salt, and pepper. Stir until veggies soften. Channel your inner lumberjack.
  3. Cheese party. Mix ricotta and ½ cup mozzarella in a bowl. Add the turkey-veggie mix. Taste-test. (This step is mandatory for quality control.)
  4. Spread the love. Lay a noodle flat. Smear 2-3 tbsp of filling down the center. Roll it up like a burrito with commitment issues. Repeat.
  5. Sauce it up. Spread ½ cup marinara in a baking dish. Place roll-ups seam-side down. Top with remaining sauce and cheese.
