Spinach and Feta Stuffed Chicken Breasts – Because Chicken Deserves a Spa Day Too

Let’s face it: plain chicken breasts are the gym socks of the food world. Reliable? Sure. Exciting? Not so much. But stuff them with spinach and feta, and suddenly, they’re wearing a tiny chef’s hat and doing a little dance. This recipe is here to turn your boring chicken into the life of the dinner party. Let’s get stuffing!

Ingredients

Here’s what you’ll need (serves 4):

Instructions

Step 1: Preheat and Prep
Preheat your oven to 375°F (190°C). While it heats up, grab your chicken breasts and pat them dry with paper towels. Think of it as giving them a quick towel-off after their spa day.

Step 2: Make the Filling
Heat the olive oil in a pan over medium heat. Add the garlic and sauté for 30 seconds until it smells amazing. Toss in the spinach and cook until wilted. Remove from heat and let it cool for a minute. Mix the spinach with the feta, oregano, salt, and pepper. Congratulations, you’ve just made chicken’s new best friend.

Step 3: Stuff the Chicken
Take a sharp knife and cut a pocket into the side of each chicken breast. Be careful not to cut all the way through—this isn’t a magic trick. Stuff each pocket with the spinach and feta mixture. If you’re feeling fancy, sprinkle breadcrumbs on top for a little crunch.

Step 4: Bake It Up
Place the stuffed chicken breasts in a baking dish. Spray them lightly with cooking spray or drizzle a bit of olive oil on top. Pop them in the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 5: Rest and Serve
Let the chicken rest for 5 minutes after baking. This gives it time to relax and soak up all the cheesy, spinach-y goodness. Slice, serve, and watch your family or friends do a double take.

Tips for Success

Why You’ll Love This

This dish is easy, delicious, and looks like you put way more effort into it than you actually did. It’s perfect for weeknight dinners or impressing your in-laws. Plus, spinach and feta are basically the Batman and Robin of flavor combos.

So go ahead, give your chicken the upgrade it deserves. And if anyone asks, tell them you slaved over it for hours. We won’t tell. 😉
